This charming unit located rue des Gravilliers in the 3rd arrondissement of Paris benefit from a very special and magical Parisian atmosphere. From the wooden facade to the stone walls, including the beautiful glass roof at the center of the restaurant, the elegance fits perfectly the delicate cuisine of the talented Manon Fleury. The challenge for us was to reveal this space without modernizing it. We had to investigate to find a beautiful stone wall hidden behind a thick plastic paint, design a set of joinery honoring the magnificent wooden façade and reveal the chefs in the kitchen as soon as you enter the restaurant. We wanted it to be difficult to discern the existing from the rehabilitated. For this, we called on craftsmen and artists who used materials that were not only innovative but also very respectful to our environment.

This project is above all the result of close collaboration between various creative circles with the common goal of creating a place that reflects the committed cuisine that Manon Fleury offers.
